Courgette Sake Martini

I had a couple of sad looking courgettes at the bottom of the fridge and just a wee bit of Sumi sake from Kanpai left over from last night. Cocktail time! Sumi is clear and off-dry with tropical fruit flavours and a hint of caramelised nuts. Its fragrant, fruity taste pairs really well with courgette water becoming almost appley, and a splash of fresh lemon juice gives it a zip and zing.

By the way, keep the grated courgettes to make delicious grated courgette patties.


Ingredients

  • 60ml sake

  • 60ml courgette water

  • 1tbs freshly squeezed lemon juice

  • 2tbs simple syrup

  • 1 egg white


Instructions

1. Wash and grate 2 courgettes. This should yield enough liquid for 1 drink. Place the grated courgettes in a cheese cloth and squeeze the liquid into a small jug.

2. Add the courgette water, sake, lemon juice and syrup and dry shake to combine.

3. Add the egg white and ice to the shaker. Shake vigorously, until the shaker is painfully cold to hold.

4. Strain through a fine-mesh sieve into a chilled martini glass.
